Tupí de Sort is made with raw cow's milk from semi-cured and cured cheeses mixed with extra virgin olive oil and brandy (pomace) in such a way that a second (oxidative) fermentation is caused. Creamy and spreadable in texture, with a strong, long and persistent flavor, slightly oxidized and with aromas reminiscent of brandy and olive oil. It self-fermented for at least 2 months.
